Our wines
The vines for the Paradise chardonnay grow on a north facing hill side, sheltered by a mature pine forest. We believe that this unique topography gives our chardonnay its distinct characteristics.
The vines are tended to on a regular basis. They are given the love and care that is required to grow beautiful tasting grapes. Once the grapes have matured, they are then delicately hand picked and basket pressed the same day. The juice is It is then transferred into French oak barrels where it undergoes the process of fermentation, this involves using specialist yeast and expert craftmanship. The process of bud to bottle is done entirely on site, in our vineyard winery. This enables us to oversee and perfect each stage of the wine making process.
This Chardonnay is our premier wine. Showing lemon and peach with classic citrus and creamy oak complexities. It has an excellent mouthfeel with a long elegant finish.
This section of vines is situated on a north facing hillside adjacent to our lake and olive grove. It also benefits from shelter from our mature pine forest. These Merlot vines produce a wonderful, flavoured grape that lends itself perfectly to our Rosé wine. Once mature, these grapes are hand picked and basket pressed on site the same day. The Rosé juice is then transferred into our modern stainless steel chiller tanks to begin the fermentation process. This preserves the delicate flavour and character of the grape. Once this has been completed the wine is moved into our temperature controlled holding tanks to develop further.
Bottling takes place on site where we produce two types of Rosé. Our sparkling Merlot Rosé called Frou Frou, and our delicious still Rosé wine.
Both are crisp and fruity , revealing a pleasant mouthfeel and elegant finish.
Our rosé is a delicate expression of summer, brimming with notes of fresh strawberries, watermelon, and a hint of citrus. Light and crisp, it has a smooth, refreshing finish that invites you back for another sip. Perfectly suited for picnics, light salads, or enjoyed on its own, this rosé brings a taste of sunshine to any occasion.
